Wonton soup

Here is a recipe of how to make wonton soup. Wonton soup (i馄饨汤 Húntún tāng) is basically Chinese style ravioli with Chinese based ingredients. The pastry is thinner than ravioli so that is why it is much better to buy shop bought ones rather than making at home using the pasta making machine. There are loads of wonton wrapper recipes around from vegan to ordinary version. It just requires a bit of time and elbow grease. I will post a wonton wrapper recipe once I manage to perfect version that has got a combination of chinese and healthy ingredients to my liking.

This recipe goes well with my pasta recipe and with homegrown pak choi Growing and harvesting Pak choi It is a great autumn and spring vegetable to grow.

Recipe makes about 4 portions.

Filling

300 grms of minced pork (I use free range low fat ones)

150 grms of raw peeled devein prawns

1 small carrot

6 dried shitake mushroom (reconstitute with hot water)

1 water bamboo stalk or 70 grms of water chestnut (half a can, drained)

3 stalk of spring onion

1 tablespoon of sesame oil

1 tablespoon of dry white sherry (Chinese cooking wine)

one teaspoon cornflour

one teaspoon soy sauce (I prefer low salt ones)

Black pepper a few turns on the grinder or enough to taste

one egg yolk only. Reserve the egg white to seal the edges of wonton pastry

Clear soup base

or use my chicken stock base Chicken noodle soup

500 grms of chicken wings

250 grms of pak choi cut into quarter or slice into 3 cms wide

200 grms of ready-made wonton pastry

Some shrimp chilli oil to taste (optional)

Method

Chop or slice all the filling ingredients finely.

Mix all the filling ingredients together.

Then start to fill the pastry. Use about 1 teaspoonful of filling to a pastry. Fold it into a triangle and then make a pleat.

In a pot boil the clear soup base with about 1.5 litres of water. Add the chicken wings and the water from shiitake mushroom.



When the wonton wrappers are all filled up. Boil a pot of water (about 1.5 litres) to cook the wontons. When the water is boiling swirl the water around add the wonton at the same time. This is so that it doesn’t stick to the bottom of the pot. It takes about 3-5 minutes to cook the wontons. When the wontons start to float they are ready and cook.

At the same time cook the pak choi in the chicken stock. It takes about 3-5 minutes to cook the pak choi.

Take the wontons out arrange them in a bowl. Add the clear soup broth then the pak choi. Serve with some shrimp chilli oil. Enjoy. Do let know how you get on comments below.

Here is how to make wonton soup recipe from scratch

  • 300 grms minced pork

  • 1 carrot
  • 6 dried shiitake mushroom
  • 1 water bamboo (optional or use water chestnut)
  • 70 grms water chestnut
  • 3 stalk spring onion
  • 1 tbsp sesame oil
  • 1 tbsp dry white sherry
  • 1 tsp cornflour
  • 1 tsp soy sauce
  • 1 egg yolk (reserve egg white to close pastry)

Clear soup base

  • 500 grms chicken wings
  • 250 grms pak choi (chopped)
  • 200 grms ready made wonton pastry
  • shrimp chilli oil to taste
