The health benefits of eating sweet potato have been shown to be much better than ordinary potatoes and many other sources of carbohydrates. With its sweet taste, it appeals to all ages. I came to know about sweet potato after having to start to wean my son on it. He ate a lot of sweet potato in his growing years as a result.

This recipe is a great accompaniment to any dish that uses potato chips. Or on its own as a finger food or snack time recipe.
I have use cornflour to add more crisp to the sweet potato chip. It also makes it a gluten-free option. Feel free to use plain flour if you haven’t got any cornflour handy.
Do use a non-stick surface for that you can turn the chips so as to ensure even cooking. It is possible to deep fry these chips. I much prefer using the oven as it’s a much less messy and healthier option.
Recipe on how to make sweet potato chips.
Makes about 4 portions.
300 grams sweet potato
1 tablespoon oil (rapeseed or olive)
1 tablespoon cornflour
A few turns of black pepper grinder or powder
A pinch of salt to taste
Silicon baking mat, baking parchment or non-stick baking surface.
Method
Preheat the oven to 200 degrees Celsius fan assisted. Line the baking tray with silicon baking mat or an non stick surface.
Peel, wash and cut the sweet potato into strips.
Then add the black pepper, salt and cornflour.
Spread them out thinly on the baking tray. Bake them in the oven after 20 minutes when it’s crisping up turn them over. At this stage, some chips will be soft so be gentle when you turn them over. Otherwise, just wait a bit longer till it cools furthers which would help the chip to harden up. The water content in the chip will be evaporated in the baking process.
After that cook for a further 10 more minutes. Serve as a side dish.
