Here is a recipe on a cooking sardine and lemon chilli dip sauce. Due it’s fishiness smell sardines aren’t everyone favourite. However, it’s available in abundance, cheap to buy and it’s so good for you as it’s high in Omega 3.
This recipe uses a chilli lemon dip to counteract the fishy smell. The sardine can be grilled on a barbecue or pan fried. As it’s fillet it’s quite to cook which makes it a quick easy dish to make. This dish is great to serve either with rice and some stir-fried vegetables like Pak choi and water bamboo. It also can be served with some bread and salad.
To make it a gluten free recipe try serving it with gluten-free bread or alternatives like potatoes or rice noodles.
Recipe for sardine and lemon chilli dip
200 grams of filleted and deboned sardines
1-2 tablespoon of cooking oil (corn or rap seed oil)
Dip recipe
1 lemon zest and juice or 1 lime zest and juice
One red chilli
1 teaspoon fish sauce
3 cloves garlic
Method
Cook the sardine either under the grill, barbecue or pan fry in shallow pan.
If frying on a pan heat up some oil. The oil can also be use on the barbecue or grill to prevent it from sticking.
As it’s fairly small and thin it doesn’t take too long to cook.
Once the sardine skin starts to crisp up it is ready.
Prepare the chilli lemon dip
Chop or slice the red chilli into thin slices. Peel and chop the garlic.
Add all the ingredients together and let it rest for 10 minutes. This dip can be prepared ahead of time like the day before. Or before the cooking the sardine.
If eating from barbecue serve it on it’s own with some green or potato salad. If no serve it with some rice. Enjoy. Thank you for dropping by.
