This is a blog post on prawn and samphire stir fry. Samphire is in season at the moment. It’s a great way to cook it. Samphire is a vegetable that is found on the coast near the sea. It has got naturally salty after taste. A taste of seawater. It is naturally high in Vitamin A, a good source of iron and calcium. I have bought it from an online supermarket Waitrose. Here is the link to it. It is normally available in late April to May it is not available all year round.
Any type of seafood makes a great accompaniment to samphire. This recipe can be served on a bed of rice or noodles. Samphire can also be used in clear soup noodle recipes. Stir-fries are a great way to cook them as it requires very little cooking time. it’s great to serve with rice. it makes a quick mid-week meal.

EQUIPMENT
- wok or frying pan
INGREDIENTS
- 90 grams samphire
- 150 grams cooked or raw prawns
- 3 cloves garlic finely chopped
- 3 stalks spring onion
- 1 tbsp cooking oil
- half lemon (juice only)
INSTRUCTIONS
Prepare the stir fry ingredients
- As cooking a stir fry doesn’t take long. do prepare ahead of the ingredients. Chopped finely the garlic. Slice the spring onions thinly separate the white parts and the green parts. Defrost the prawns well ahead of time. Wash the samphire.
Cooking
- In a wok or frying pan on medium to high. Heat up the wok till it is hot where it starts to smoke a little. Then add the cooking oil. Add the white part of the chopped spring onion and the minced garlic. Fry till it is fragrant this will take about 2 minutes. Then add the samphire and then the prawns. If using cooked prawns add them later. Once the samphire starts to wilt add the lemon juice and turn off the stove. It is now ready to serve.
