This a post on pineapple fried rice recipe. This pineapple fried rice uses minced pork and some sambal (Asian spicy relish) to go with the pineapple flavour rice. Pineapple fried rice is quite commonly found in South Asian cuisines as pineapple and rice is natively grown there.

Recipe for pineapple fried rice
1 medium size pineapple
500 grm minced pork
1 tablespoon fish sauce
500 grms cooked rice or 2 cups of cooked rice Kept chill in fridge.
1 medium size onion
3 cloves garlic
1 tablespoon cooking oil
3 stalks of spring onions

Fried onions
Sambal
3 fresh red chillies
1 medium size brown onion or 3-4 medium size Asian shallot
1 cm shrimp paste
3 cloves garlic
2 tablespoon dried shrimp (rehydrate with 30 mls of hot water)
1 tablespoon cooking oil
1 lime (juice only)
A electric blender or pestle & mortar to blend the ingredients
Making the sambal
Peel the onion and garlic. Cut the stems off the chillies. In a blender or pestle & mortar add all the ingredients. Blend till it it’s finely chopped and well mixed into a paste.
Heat the oil in a saucepan or wok. Fry the blended ingredients over medium heat till fragrant. Add the lime juice at the end. It will keep well in freezer or fridge.
Cooking the pineapple fried rice.
Marinate the mince pork with the fish sauce.
Chop and dice the onions into small cubes (about 0.5cm). Dice the garlic as well. Slice the spring onions into thin slices.
Peel and dice the pineapple into small cubes (about 1-2 cm).
In a saucepan or wok heat the oil on a medium heat. Add the onions sauté till it starts to go soft. Then add the garlic. Fry till fragrant. Add in the marinated mince pork. Fry till the pork is nearly cook. Add the chill rice and the pineapple cubes. Stir fry till pineapple starts to soften and the pork is fully cook. Turn the heat off and add the spring onions.
