Here is a Jerusalem artichoke chicken recipe I use to cook a lot of times last year winter time. It’s Jerusalem artichoke harvest time at the moment. Jerusalem artichoke are also known as sunchoke which is the same thing. You may have heard of inulin in jerusalem artichoke that causes wind or stomach upset in some people. If you do one recommendation is to boil the Jerusalem artichokes with some lemon juice before adding them to the chicken stew. It will alter flavour however by doing so it will convert the inulin to a different compound and therefore reduces the effect.
There lots of different types and varieties of jerusalem artichoke. I have grown two types and yes you can different types of artichoke for this recipe.
Recipe Jerusalem artichoke chicken
(makes about 3-4 portions, preparation time 15 minutes, cooking time 40 minutes to 1 hour)
Ingredients
750 grms of chicken thigh with bones and skin on
500 grms of Jerusalem artichoke
300 grms of leek
1 medium size carrot
3 cloves garlic
Ovenproof dish with lid or ovenproof aluminium foil
Some salad like this pak choi and gem lettuce salad just the leaves and the dressing minus all the trimmings.
A few slice of bread to soak up the juices
Method
Heat up the oven to 200 degrees Celcius. Clean and scrub the Jerusalem artichoke. they can be quite knobbly so they hard to peel. I always try to peel as much as I can with potato peeler.
Chop the leek into 2-3 cm chunks. Wash and separate the chicken thigh and drumstick up by cutting at the joint. Peel and chop the garlic roughly. Peel and chop the carrot into 2-3 cm chunks.
Put all the ingredients in an ovenproof dish. cover with a lid or aluminium foil. Put it in the oven and let it cook for 30-40 minutes.
Check the chicken is cook. Once the meat start separating from the bone the chicken is cooked. Also check that the juices run clear and the centre of the chicken is not pink in colour.
Serve with some salad and some bread.
