This is a blog post on Chicken celery and sesame salad. It is a Thai-inspired salad dish. It has got a bit of Chinese and Thai flavors which makes this salad appetizing. Like most Asian dishes this salad is great to serve with rice. It is simple to make and it makes use of supermarket-bought ingredients. The chillies in this recipe can be omitted if it’s too hot for some.
This recipe is made from chicken breasts or thighs. It is poached in water with some ginger. The poached water can then be used as a broth or soup for another recipe.
Chicken celery and sesame salad recipe.
Ingredients
2 medium size chicken thighs or breast
2 slices of fresh ginger
4 celery sticks, thinly slice
a handful of Fresh coriander leaves
1 tsp toasted sesame seeds (optional)
Dressing
1-2 tbsp sesame oil
1 tbsp light soy sauce
2 tbsp rice or white wine vinegar
2 tsp caster sugar
3 cloves garlic minced
1 tbsp grated fresh ginger
2-3 Red or green chilies to taste.
2-3 stalks of spring onions, finely slice
Method
Cook the chicken thigh by boiling it in a pot of water with some ginger. Once it starts to cook add the thinly sliced celery. Blanch it for 1-2 minutes. Then both the chicken breast and sliced celery out of the boiling pot.
Then flake the chicken breast/ thighs into thin salad slices. Put in a bowl with the celery and chopped coriander. Set aside.
Then prepare the dressing by adding all of the ingredients together. Set aside.
When ready to serve add the dressing to the prepared chicken breast/ thigh. Serve with boiled rice.
